How do I file my first French tax declaration?

What documents are required for a CAF claim?
It depends on the claim. Open the matching procedure (APL, prime d'activité, and so on). Each one lists every document, with a note on what counts as acceptable proof.
Where can I find my numéro fiscal?
Top right of page one on any letter from the Direction Générale des Finances Publiques. If you have never had one, the income-tax procedure walks you through requesting it.
Is health insurance mandatory for students?
Yes. EU students use their European Health Insurance Card; non-EU students register via etudiant-etranger.ameli.fr.
